The inspiration behind Shojin Ryori came to us when we visited the Big Buddha in Kamakura, Japan. The Japanese monks' food consist mainly of plant based diet. We researched and we developed Maruya's version of shojin ryori. All the ingredients are plant based. Even the dashi is konbu based. Maruya's Shojin Ryori consists of 8 dishes which are all served simultaneously. The vegetables featured will vary from day to day or week to week.
